This product is originally from New Zealand, by Lumina, and each piece is 1.2 – 1.5 kg and above. Hind Shank is the cut of lamb taken from the lower section of the animals. The meat itself is finely marbled and enriched with high levels of naturally occurring Omega-3 polyunsaturated fats. It’s characterised by a mild aroma, light pink to pale red colour, and a tantalising, lighter-bodied texture.
